This is a great pasta salad to pair with a light protein or enjoy on its own on a hot day.


  • Bowtie pasta
  • 700 grams of tomatoes
  • 3 cloves of garlic
  • 1/3 cup of basil
  • Salt and pepper
  • 1/4 cup of olive oil


  • Dice tomatoes, roughly chop basil and grate garlic
  • Combine olive oil, garlic and basil in a large bowl
  • Add the tomatoes into the bowl and stir well
  • Add salt and pepper to taste
  • Let sit for 4-8 hours
  • When you are ready to eat, cook your pasta in heavily salted water, drain the pasta and add the hot pasta to the sauce
  • Give it a good mix and serve it with a drizzle of olive oil and parmesan cheese
